GRILLED WILD PACIFIC HALIBUT WITH THE PRESERVATORY – PEACH JALAPENO & TEQUILA PRESERVES

In the summer there is nothing better than a fresh off the grill, fillet of Wild Pacific Halibut. This simple recipe is great for family BBQs, served with our zesty Jalapeño Cornbread and a simple summer salad dressed in sherry vinegar, grainy Dijon and olive oil to round out the meal.

Ingredients

MARINADE

  • 1 Tbsp- lime or lemon juice

  • 1 Tbsp – olive oil

  • 1 – garlic clove, minced

  • 1/2 tsp – salt

  • 1/2 cup – Preservatory – Peach Jalapeno & Tequila Preserves

    JALAPENO CORNBREAD WITH THE PRESERVATORY – PEACH JALAPENO & TEQUILA PRESERVES

    • 2 cups – cornmeal

    • 1 cup – all-purpose flour

    • 1 Tbsp – sugar

    • 2 ¾ tsp – salt

    • 2 tsp – baking powder

    • ½ tsp – baking soda

    • 2 cups – buttermilk

    • 2 – large eggs

    • 6 Tbsp – melted butter

    • ½ cup – frozen or fresh corn

    • 2 tsp – olive oil

    • 1 – jalapeno, seeds removed and finely chopped

Method

  1. Heat grill to med-high.

  2. Whisk marinade ingredients in small bowl.

  3. Place Wild Pacific Halibut on tin foil skin side down and pour marinade over evenly. Let halibut sit in marinade for not more then 10 minutes or it will cook without you.

  4. Sear skin side up for 3 to 4 minutes, flip onto skin side and smear preserves from end to end and cook on grill until perfectly cooked – just as the flesh begins to turn white and slightly separates into flakes. Remove from heat so as not to overcook.

    DIRECTIONS

    1. Combine and whisk dry ingredients in large mixing bowl. Combine and whisk buttermilk and eggs in separate bowl. Combine wet mixture and dry mixture and stir well. Stir in melted butter and corn.

    2. Preheat oven to 450° F.

    3. Heat a 10” cast iron pan on stove and add olive oil. Quickly sauté jalapenos in hot oil, 1 to 2 minutes until fragrant. Remove from heat and pour cornbread mixture into hot pan.

    4. Bake 15 to 20 minutes, until golden brown.

    5. Serve with butter and The Preservatory – Peach Jalapeno & Tequila Preserves.
